Get Grilling

Everyone’s got a favorite burger recipe and tips and tricks for perfect grilling. But what about the all-important side dish? We are the land of meat AND potatoes, are we not? For a complete meal, for vegetarians, or for just a mouth-watering afternoon snack, here’s a twist on one of our favorite things to throw on the grill.

Grilled Sweet Potatoes with A Little Something Special

Ingredients:
4-5 sweet potatoes
1/3 cup olive oil
1-2 tbsp Mexican spice blend [based on preference]
1-2 tbsp salt [based on preference]
lime zest and juice from 1-2 limes
1/3 cup cilantro, chopped

Wash potatoes. Place in a pot of water and boil until fork-tender. Remove and let cool.

Slice potatoes into ¼-½” rounds. Toss in olive oil, spice blend, salt, and lime zest and let marinate for 15-20 minutes.

Preheat a grill to medium – medium-high heat. Cook potatoes for 1-2 minutes on each side (depending on thickness of rounds), until you see grill lines or light browning (though we kind of like it when the skin gets a little “too” dark!).

Top with lime juice and cilantro. Serve with a side of sour cream and sliced avocado.
